Stuffed Peppers: Review
Before making these peppers I debated on whether or not to include a tomato sauce on top of them and while I may still try that in the future, I’m really happy I left it off these ones. It really allowed for the saltiness of the Parmesan cheese to come through and kept the texture nice, crisp, and brown, which was a nice contrast to the filling.
I was also worried that my ever-watchful 5-year-old would be able to identify the tiny chopped up zucchini and mushrooms, and she did. But, she loved them and both my girls ate up every bite of their stuffed peppers – progress with picky eaters!
This is definitely one that I’ll be making again. Next time though, I may have to change it up….just a bit….
