Peach Pistachio Chicken: Review

This recipe came from one of those days when I was staring at the contents of my cupboards and was thinking “I wonder what this would taste like…” And it just proves that sometimes, some of the best recipes come from experiments. This recipe has a huge yumminess factor and you don’t have to worry about adhering the fruit mixture to the meat in any way. I was worried about the entire mix falling off the chicken while it was cooking but the sugar and the vegetable oil are enough to sort of seal the mix to the meat. Mind you, some pieces may fall off along the way while you’re eating it, but what’s a good meal without lots of little bits to scoop up?
