I got this recipe from All Recipes, and there are a few things that I really love about it. First, it’s bread that you can make in your own kitchen without using bread flour. Now, I’ve heard that you can make any kind of bread you want without using bread flour. But, I’ve also heard that it’s pretty dense and not as wonderful as if you had used proper flour. This focaccia though, you don’t have to worry about it.
Another thing I love about this recipe is that you can completely screw it up, and the chances are that it will turn out just fine. I know, because I completely screwed it up. I didn’t think that the dough was ‘pulling away from the sides of the bowl’ as I was beating it yet, I dumped it out on the counter anyway because I thought it was blended enough. I also missed the part about covering it with the bowl for 5 minutes. I’m assuming that’s so that the yeast has a chance to rise and make the bread fluffier, but I didn’t do it and my bread turned out just fine. And, oh yeah, I forgot to drizzle the bread with olive oil until after it had already been in the oven for 5 minutes and again, you couldn’t tell the difference.
What I love most about this recipe though is that it’s delicious! Serve it with a little balsamic vinegar and olive oil and you’ll feel just like you’re sitting in a wonderful Italian ristorante!
