Captain Country Chicken: Review

I got this recipe from Rachel Ray’s book 30-Minute Meals 2. It’s a lot like my Tomato Chicken recipe but, not nearly as good. I was excited about this recipe because it had curry in it, so I was hoping to get a lot of that curry-kick. It failed on that end, as I couldn’t even taste the curry in it. The chicken was okay-tasting and pretty easy to make but, I did cook it for a little longer in the sauce than what was called for in the recipe. I just don’t think chicken can cook through in 10 minutes, I don’t care how small you cut it up. And with chicken, you definitely want to be sure. And to be honest, I found the halved-chicken pieces to be rather unappetizing.

I also didn’t add the raisins or the almonds. Let’s remember the people that come to my table every night to eat. And although I might still leave out the nuts if I ever make this again, I might still add the raisins (and leave everyone else to pick them out.) I might try and make another Captain Country Chicken recipe again but I’m definitely going to be making a lot of changes when I do.
