7 Layer Dip

Refried beans, sour cream, and salsa – these are just a few of the main ingredients typically found in seven-layer dipBut the beauty of this dish is that it can be absolutely whatever you want it to be.

My sister-in-law is famous for pulling her layered dip out when family dinners are at her place, and hers includes just salsa, sour cream, and cheese. It’s beautiful. But because I need all the food, I included a few more items and warmed it up a bit so the cheese would get all gooey and melted. You can also see that I used green olives in place of the black olives that are usually used to decorate the top of this dish. Black olives however, are one of the very few foods that I absolutely cannot stand. Again, you make this your own and include (or exclude) whatever you want.

The layers may not have all come out in the picture, but they were all present and accounted for on every single chip, which is the mark of a good seven-layer dip.

  • 1 can (about 1 cup) of refried beans $1.19
  • 1 cup (more or less if you’d like) Cheddar cheese, shredded $1.25
  • 1 1/2 cups sour cream $0.90
  • 1 1/2 cups of salsa $0.83
  • 1 tomato, diced $0.28
  • 2 cups lettuce, shredded $1.00
  • A handful of olives, sliced $0.40

Total cost $5.85
Cost per serving $0.73

1.) Preheat oven to 400 degrees Fahrenheit.

2.) Spread refried beans evenly into the bottom of a casserole dish or a clear bowl. Place in the oven and allow to heat through. This should only take a few minutes.

3.) Remove the bowl from the oven and sprinkle the Cheddar cheese evenly over top of the refried beans. Place back in the oven and allow to heat through until the cheese has melted. Again, this should only take a few minutes.

4.) Remove bowl from oven and turn the oven off. Spread the salsa over top of the melted cheese, and the sour cream on top of the salsa. Sprinkle the lettuce completely over the sour cream, then place the diced tomatoes in the centre of the lettuce, and the sliced olives on top of the tomatoes.

5.) Serve with tortilla chips, and enjoy!
