Roast Beef Sandwiches

Life has just been way too crazy lately. I’m still wondering where February went and here we are at the end of March. But while it’s true that there’s been a lot of running around lately, there’s always time for a good meal, even if that meal only constitutes a roast beef sandwichWith no real cooking required, this one only takes the amount of time it takes to assemble the sandwiches.

I kind of hate lettuce on sandwiches, and pepper and roast beef are such good friends that I used peppery arugula for the greens; and instead of mayo or mustard, I drizzled a lot of pesto on the buns. On those days that just seem to get away from you, I recommend picking up a jar from the grocery store. It’s great for throwing on roast beef sandwiches, pasta, or anything else that needs a quick jolt of flavour.

1.) Preheat the broiler and slice the sub buns in half lengthwise, but make sure not to slice it all the way through. Open the sub buns up on a baking sheet and place them in the oven for just 1 minute to toast.

2.) Remove buns from the oven and pile on the roast beef, evenly distributing it between the four buns. Place one or two slices of Swiss cheese over the roast beef on each sandwich. Place back under the broiler and leave for just another minute to let the cheese melt.

3.) Remove the sandwiches from the oven and top with tomatoes and arugula.

4.) Drizzle the pesto over the buns or sandwich fillings (or both!) and close sandwiches.

5.) Cut roast beef sandwiches in half, serve, and enjoy!
