Pesto Zucchini Rolls

I think these look very elegant and more importantly, they taste fantastic! You can pop about a dozen of them into your mouth in mere minutes, but that’s okay. Made out of zucchini and spinach pesto, they’re super healthy for you too.

1 -2 zucchinis (depending on how many rolls you want) $1.99
2 tablespoons olive oil $0.06
Salt $0.01
Pepper $0.01

1.) Slice the zucchini, lengthwise and very thinly, using a mandolin so they turn into long delicate ribbons. Heat an indoor grill over medium heat.

2.) Brush both sides of the zucchini with olive oil, and sprinkle with salt and pepper.

3.) Place the zucchini slices in a single layer on the grill and cook for about 2 minutes on one side. Very gently turn the zucchini slices over, and cook for another minute or two, just until the zucchini softens and is more pliable.

4.) Remove zucchini slices from the grill and allow them to cool enough to handle.

5.) Spread a thin layer of spinach pesto down the length of each zucchini slice. Starting from one end, gently roll the zucchini up, so that thin layers of pesto are between thin layers of zucchini.

6.) Serve, hot or at room temperature, and enjoy!
