Cod En Papillote

4 cod fillets $15.68
1 lemon, cut into quarters $0.65
1 lemon, sliced into rounds $0.65
1 red onion, sliced thinly $0.65
4 tablespoons butter, divided $0.24
1 bunch green onions, trimmed of roots $0.69
Salt and pepper $0.02

Total Cost   $18.58

1.) Preheat oven to 375 degrees Fahrenheit. Then tear off four pieces of parchment paper and lay them out flat.

2.) Divide up the red onion slices into four equal portions and place a portion in the centre of each piece of parchment paper. On top of the red onion slices, place a lemon wedge. Then place a cod fillet on each piece of lemon. Top each cod fillet with two green onions, a tablespoon of butter and a lemon wedge. Then sprinkle each piece with salt and pepper.

3.) Taking two sides of a piece of parchment paper, bring them up over the fish and then fold them down until the paper is about an inch or two away from the fish. Then twist the ends so that the fish is completely sealed with parchment paper. Do this with the remaining pieces of parchment.

4.) Place each piece of parchment paper on a baking sheet and place in over for about 10 – 15 minutes, depending on how big the fillets are. Test to see if done by flaking with a fork. When the fish flakes easily, it is done. When done, put the entire piece of parchment on a plate.

5.) Serve and enjoy!
