I’ve already told you this week how lettuce isn’t my favourite things in salads. Beans however, are a different story. I’ve always been a big fan of bean salad although, that too is something I have to really be in the mood for. Before my bean salads have always included just that – beans and beans alone. While it can still be tasty, and definitely very good for you, I find that the mealiness that comes from the beans isn’t always so appealing. This salad breaks that up a bit, with three different kind of beans (I don’t know, are chickpeas an actual bean?) and a whole bunch of different veggies just to keep it interesting. Mix it all up with a lime/cilantro dressing, and it’s delish!
1 can black beans, rinsed $1.29
1 can kidney beans, rinsed $1.29
1 can chickpeas, rinsed $1.29
1 large carrot, grated $0.17
5 radishes, diced $0.80
1 green pepper, diced $0.71
2 small tomatoes, diced $0.94
1/2 English cucumber, peeled and cut into bite-size pieces $0.64
1/2 red onion, sliced thinly $0.33
2 stalks celery, diced $0.26
Zest of 1 lime $0.25
Juice of 2 limes $0.50
1/2 cup fresh cilantro, chopped $0.50
1/2 teaspoon mustard powder $0.01
1/4 cup olive oil $0.12
Total cost $9.12
Cost per serving $1.52
1.) Place all the veggies in a large bowl.
2.) Whisk together the juice and zest of the limes, cilantro, mustard powder, olive oil, salt, and pepper and allow to sit for about 15 minutes so that the flavours can marry.
3.) Pour dressing over veggies and beans, and mix thoroughly.
4.) Serve and enjoy!
