BBQ Chicken Pasta

 

1/2 package spaghetti $0.50
2 boneless, skinless, chicken breasts $6.60
1/2 recipe Kate’s Barbecue Sauce $4.37
2 tablespoons olive oil $0.36
Salt and pepper $0.02
1/2 cup Parmesan cheese $1.49
1/2 cup fresh parsley, chopped, for garnish $0.50

Total Cost    $13.84

1.) Preheat oven to 400 degrees Fahrenheit. Rinse chicken breasts and pat dry. Place chicken on a cookie sheet and drizzle with olive oil; sprinkle with salt and pepper. Place in preheated oven and bake for 20 – 25 minutes until chicken is cooked and juices run clear. When chicken is done, remove from oven and allow to cool enough so that you can handle it; then shred into bite-size pieces.

2.) Bring a large pot of water to a boil. Add salt and pasta and cook according to package directions.

3.) In a small saucepan place BBQ sauce over medium heat and cook, stirring occasionally, until warmed through.

4.) When pasta is ready, drain and place back in pot. Add barbecue sauce, chicken, and Parmesan cheese. Stir to mix well.

5.) Serve and enjoy!
