Cooking Glossary: L

Lard – This is white pork fat that has been rendered and clarified so that it can be used for cooking.

Leavening – This is a substance that creates gas in dough and batter so that it can become fermented, lighter, and so that it will rise. Yeast, baking soda, and baking powder are all common leavening agents.

Lemon balm – This herb is green and tastes and smells like lemon. It’s used for flavouring.

Lemon grass – Much like lemon balm, lemon grass also smells and tastes like lemons and is also used for flavouring.

Loganberry – This delicious fruit is a cross between a raspberry and a blackberry.

Loin – A loin of meat is a cut that’s been taken from the back of the animal. Typical loin cuts come from pork and lamb.
