<p>1.) Bring salmon fillets up to room temperature. Season with salt and pepper and drizzle 2 tablespoons olive oil over both sides.</p>
<p>2.) In a large skillet over medium-high heat, heat one tablespoon of olive oil. When piping hot, add salmon fillets to the pan skin-side down. Cook for 7 &#8211; 8 minutes, depending on the size of the fillet. Flip and cook other side for 2 &#8211; 3 minutes, just until nicely browned. When finished, salmon should be &#8220;kissed&#8221; with pink in the centre, opaque on all sides, and flake easily with a fork.</p>

<p>1.) Preheat oven to 375 degrees Fahrenheit. Then tear off four pieces of parchment paper and lay them out flat.</p>
<p>2.) Divide up the red onion slices into four equal portions and place a portion in the centre of each piece of parchment paper. On top of the red onion slices, place a lemon wedge. Then place a cod fillet on each piece of lemon. Top each cod fillet with two green onions, a tablespoon of butter and a lemon wedge. Then sprinkle each piece with salt and pepper.</p>
<p>3.) Taking two sides of a piece of parchment paper, bring them up over the fish and then fold them down until the paper is about an inch or two away from the fish. Then twist the ends so that the fish is completely sealed with parchment paper. Do this with the remaining pieces of parchment.</p>
<p>4.) Place each piece of parchment paper on a baking sheet and place in over for about 10 &#8211; 15 minutes, depending on how big the fillets are. Test to see if done by flaking with a fork. When the fish flakes easily, it is done. When done, put the entire piece of parchment on a plate.</p>
<p>5.) Serve and enjoy!</p>

<p>1.) Preheat your oven\’s broiler. Grease a broiling pan or line pan with aluminum foil.</p>
<p>2.) In a small bowl, mix together the Parmesan cheese, butter, mayonnaise and lemon juice. Season with dried basil, pepper, onion powder and celery salt. Mix well and set aside.</p>
<p>3.) Arrange fillets in a single layer on the prepared pan. Broil a few inches from the heat for 2 to 3 minutes. Flip the fillets over and broil for a couple more minutes. Remove the fillets from the oven and cover them with the Parmesan cheese mixture on the top side. Broil for 2 more minutes or until the topping is browned and fish flakes easily with a fork. Be careful not to over cook the fish.</p>

<p>1.) Heat up the oil in a Dutch oven or a deep fryer to between 350 adn 375 degrees Fahrenheit. (I used a deep fryer.)</p>
<p>2.) Combine the eggs, Essence, flour, baking powder, and beer in a large bowl to mix.</p>
<p>3.) One by one, dip the fish into the batter. When taking the fish out of the batter, be sure to hold it up for a second so that the extra batter can fall off.</p>
<p>4.) Place the fish into the oil and fry until the batter becomes golden on all sides.</p>
<p>5.) After removing cooked fish from the oil, spread pieces out on a paper towel to allow them to drain. Season with salt to taste.</p>
<p>6.) Serve and enjoy!</p>

Ideally I&#8217;d like to eat fish once a week and, with myself being the only in the family that really likes it, I do have to find ways to make it extra tasty. I really thought that I wouldn&#8217;t be able to go wrong with fish n&#8217; chips. But it turns out that I gave myself too much credit. This meal quickly turned into a disaster.</p>
<p>As you can probably tell from the picture, this meal didn&#8217;t go so well. And I have no idea what the problem was! The batter was very easy to make and didn&#8217;t take long or involve a lot of ingredients. The original recipe did call for cod and I used halibut but I don&#8217;t think that would be a big enough difference to turn a wonderful dinner into a big mess. The problems came mostly when I put the fish in the fryer and then, just about anything that could go wrong did.</p>
<p>The biggest problem was that the batter dripped through the basket and formed. This caused the fish to be cooked right onto the basket, making lifting it out extra tricky. Of course when I did that, all the batter came off. Me and Brent both also found that the batter didn&#8217;t have a lot of taste. Maybe I didn&#8217;t add enough salt at the end or maybe I missed something in <strong>Emeril&#8217;s</strong> Essence when I made it. It didn&#8217;t taste <em>bad</em>. It just didn&#8217;t taste like anything at all.</p>
<p>Give the recipe a try if you&#8217;d like. I hope it goes better for you than it did for me! And let me know what you did if it does!</p>

<p><strong>Total Cost                                                                    $11.88</strong></p>
<p>1.) Preheat the oven to 350 degrees F and spray a medium-sized casserole dish with cooking spray.<br />
2.) Place the salmon in the sprayed dish. Combine the butter and lemon juice and pour over the salmon. Season the salmon with the garlic powder, dillweed, salt, and pepper.<br />
3.) Bake salmon for 25 minutes, or until the flesh is light pink and flakes with a fork.<br />
4.) Serve and enjoy!</p>

That being said, I&#8217;ve never seen him wince once after eating a piece so he must at least <em>sorta</em> like it. Plus, this salmon is cooked in butter so, who wouldn&#8217;t like it?</p>
<p>The other thing I really love about this recipe is that it&#8217;s super-easy to make. I don&#8217;t even measure out the ingredients anymore, I just use about equal amounts of butter and lemon and go generous with the garlic (although I <em>always</em> go generous with the garlic!) Pour it over and you&#8217;re done. The only problem for me often is finding a side dish that will be ready just as quickly!</p>
